Countdown to Mother’s Day has begun! I admit that I savor this one day of the year when I give myself permission not to cook or do chores (or rather refuse to do so – LOL!). That mom guilt runs deep so I rarely let myself get out of cooking a meal. And honestly, I am so type A that it’s hard for me to share that job with my husband. As you may guess, I have some high standards in the kitchen. However, I do fantasize about marrying a gourmet vegan chef in my next life who cooks for me everyday! Until then, I get Mother’s Day!

My husband and kids always want to surprise me with breakfast in bed. Super sweet, but it always makes me kind of anxious. Inevitably, my husband makes me a tofu scramble – it’s the one vegan breakfast he knows how to make. He means well and I so appreciate the thought and effort, but what I really want is… waffles. So, today’s post is rather self indulgent…my dream waffle breakfast – waffle sandwiches! Although this meal is stacked with layers, it is very easy to make…because weekend breakfast shouldn’t make you break a sweat. Ideally, you should be able to whip this up and jump back into bed within a half hour. 

It had to be a waffle sandwich because two waffles are better than one…especially with delicious fillings stacked inside! As fancy as they sound (don’t they though?!!!), they are so simple! They just look fussy, but I promise they are anything but! To make them, I used a box mix for the batter, (or try frozen ones for an even quicker prep), but if you have the time and interest, I think this waffle recipe is just great. Here’s how you make the waffle sandwiches.

For a savory waffle sandwich:

Ingredients

Your favorite waffle mix 

1 hash brown patty

2-3 slices of veggie bacon (such as Sweet Earth or Fakin’ Bacon)

2 dairy-free cheddar slices (such as Daiya)

1. Prepare the waffle batter. Pour into a waffle iron and cook.

2. Meanwhile, cook the veggie bacon and hash brown patty.

3. When the waffles are cooked, place on on a baking sheet and stack first with a cheese slice, followed by the hash brown, both slices of bacon, another cheese slice, and then finally, with another waffle on top.

4. Place on a baking sheet and broil in the oven for 2-3 minutes until the cheese has melted together.

For a sweet waffle sandwich:

Ingredients

Your favorite waffle mix 

2 strawberries, sliced

1/4 banana, sliced

1/2 cup CocoWhip (or dairy-free whipped topping)

1 tablespoon almonds, chopped

1 tablespoon coconut flakes

1/2 cup dairy-free chocolate chips

1. Prepare the waffle batter. Pour into a waffle iron and cook.

2. Meanwhile, slice the strawberries and bananas. Melt the chocolate chips in the microwave and toast the pecans and coconut in a dry saute pan.

3. When the waffles are done, place one on a plate and drizzle with a tablespoon of chocolate sauce. Next, stack the strawberry and banana slices on top, followed by the CocoWhip, a sprinkle of the nuts and coconut, a drizzle of more chocolate, and finally, the other waffle on top.
