Cinco de Mayo recipes

Cinco de Mayo is just days away, and although it’s not a “real” holiday, we’ll be sure to celebrate it in my house because I get to eat my favorite food – chips and salsa!  It’s my absolute favorite – what I would wish for if I was stranded on a deserted island and the last meal I would request on my death bed. But…I am particular about my chips and salsa. The chips have to be crunchy with just the right sprinkling of salt. If they are seasoned with lime, even better. I like my salsa mild, not spicy, and zesty with the citrusy flavor of lime. I love a good jarred salsa, but fresh is always best in my book.

Cinco de Mayo Recipes

This homemade pico de gallo is super easy (and fun to make with the kids). I made a batch for Taco Tuesday last week and it went really fast…made me wish I had doubled the recipe. There’s really nothing to it, just a few ingredients chopped up and mixed together. It’s best eaten the same day, but can keep if sealed in an airtight container for another day or so. It’s a great option for your arsenal of Cinco de Mayo recipes.

Ingredients
  1. 2 Roma tomatoes, finely chopped
  2. ½ yellow onion, finely chopped
  3. 4 tablespoons cilantro, finely chopped
  4. ½ the juice of 1 lime
  5. Salt to taste
Instructions
  1. Combine all ingredients in a bowl and stir well to combine. Taste and add more lime juice and salt, as needed.

It’s restaurant style and takes me back to when we’d go to Acapulco (so much better than El Torito, in my opinion!) as a family for dinner. That was our place for every family dining out celebration. I don’t think they’re around any more, but it was my favorite restaurant as a kid. I digress…this salsa is similar to the one I used to inhale with my chips there.
