Passover is just a week away today! This is my absolute favorite of the Jewish holidays. We celebrate big with a lively Seder full of our favorite Passover recipes and a rousing re-telling of the Passover story, complete with costumes and props! My son wearing the Moses beard is priceless!! I’ll have to post on Instagram so you can see.

I spend a lot of time crafting a menu, pulled from my own arsenal of Passover recipes, as well as some of my favorite cookbooks and bloggers. I liken it to Jewish Thanksgiving. There are many dishes that people expect every year (and would revolt if they weren’t on the menu, i.e. matzah ball soup).  I also like to experiment with new recipes, which makes me realize that I should be keeping a running log of my annual Seder menus…note to self (Project!).   

This year, I am hosting the first Seder and my sister-in-law is hosting the second night in Orange County. I usually do most of the cooking on my night and just bring a dish or two for the second. Then, throughout the week, we will have some fun matzah recipes like Matzah Pizza or a Matzah Casserole. Matzah meal makes a great coating with tofu (for faux nuggets). We can’t eat bread or pasta this year so matzah is our bread and “breading” for everything. Thankfully, my kids love it. I’ll go through a dozen boxes in the week. Most of the time, they’ll just slather it with Earth Balance for a snack.
