So, how are you?  I am back after a two-week holiday break with my family!  The time off did my good.  What about you? I needed to recharge more than I realized, and the delicious food and drink I indulged in made vacation even better.  For me, it is always about the food.  Even on vacation, I am planning what I am going to eat.  We went to Mammoth with another family for a few days to celebrate New Year’s Eve, and I still created my weekly meal planner to make sure we were properly (and deliciously!) fed.

Now that we are back home and all my kids are back in school (today!), I am back to eating healthy and purging my diet of all the special foods I ate over the holidays (um, time to cut back on the gourmet vegan cheese!).  It is said breakfast is the most important meal of the day so I thought I’d share some of my favorite healthy breakfasts to kickstart a healthy new year.  All of the healthy breakfasts below are plant-based and dairy-free, of course, great options for those cleansing and detoxing.  They are also full of protein so you can count on them to carry you through the morning until lunch.

These dairy-free parfaits are light and quick to make.  My favorite brand and flavor is Kite Hill’s vanilla, and I prefer berries, but customize with your favorite flavors and fruits.

Gourmet Avocado Toast

Avocado toast is always such a treat for me.  When I top it with fresh greens like arugula, radish, and heirloom baby tomatoes, I feel like I am eating a decadent treat fit for a queen!

Chickpea Crepe

This is one of my favorite breakfasts.  The chickpea flour makes for a hearty crepe packed with protein, but the sauteed vegetables keep things light.  Top with freshly sliced avocado for a delicious combination.
