My latest cooking video on YouTube is for a tasty side dish that you can serve this Thanksgiving or holiday season – Cranberry Apple Quinoa. It’s savory and sweet all in one. I don’t use any oil in the dressing, so it is also fat-free and figure friendly. It’s good to have at least one of these types of dishes on the menu with all of the decadent, butter and fat laden dishes that tend to overrun the table this season!
Cranberry Apple Quinoa
This Cranberry Apple Quinoa recipe is very easy to make with just 6 ingredients that are naturally vegan and gluten-free. You can batch cook the quinoa ahead of time and throw everything together minutes before you are ready to serve. This dish is best prepared and served fresh to retain the vibrancy and flavor of the herbs and lemon juice, but leftovers can be kept and spruced up the next day with another squeeze of lemon juice.
The cranberries add a holiday flair to this dish, but you could easily change it up with any dried fruit – apricots, cherries, or raisins, for example. You could also substitute any nut you prefer, as well as any combo of fresh herbs, (although I think the mint works especially well in this dish.)
