This week’s video shows you how to make healthy and delicious breakfast burritos. This is one of my favorite breakfast to make for my family. It’s quick, easy, and always delicious. I typically make a few fillings on my Batch Cook Sunday that I can use for the week. Wrapping them in a burrito always makes breakfast more fun! When I have leftovers from Taco Tuesday, I also turn those into a filling for breakfast burritos the next day. The options are really endless and ideas for fillings are only limited by your creativity and what is in your fridge and pantry. When you prep some fillings ahead of time, it makes breakfast come together quickly and easily, a saving grace on those rushed, busy mornings when you are trying to get everyone out of the house on time.
I had a lot of fun coming up with a few filling options for the breakfast burritos in this video. I share a Soyrizo and hashbrown filling; a bean/rice/cheese filling, as well as a Beyond Meat Beefy Crumble mixture. I also share a heartier filling with tofu, spinach, and potatoes. My go-to’s are Soyrizo, beans, and Daiya cheese. I hope you enjoy these as much as my family does.
