Vegetable sushi rolls are a popular meal in my house. When my kids see sushi rolls on the menu for the week, they know that means they are also getting them sushi rolls for lunch the next day! That’s the great thing about vegetable sushi rolls. You can roll some up for dinner, and make a few extra to pack in the lunch box the next day. Two meals in one!
I recently made them while entertaining some other moms and their daughters at my house, and everyone went crazy for them. I giggled with amusement as they watched in awe while I made the rolls right in front of them, showing them how easy it is to do themselves. Still, they were impressed. It just goes to show that the simplest things in life are the best, especially when it comes to food.
I think these vegetable sushi rolls are so popular in my house for two reasons. First, they are fun to eat! My kids love using their chopsticks, and I also serve the rolls with fun sides like edamame and vegetable pot stickers (more fun, finger foods.) Sushi rolls are a fabulous finger food, and most kids love these types of meals for their lunch box too. Second, they are customizable to everyone’s specific likes. I lay out all of the fillings on a cutting board and each child tells me what they want in each roll. I make it to order in minutes for them. They know they are going to get exactly the veggies they like in their roll, and it feels special because it is made just for them. Also, the kids get to be part of the action if they choose to roll their own sushi. It’s a chance to get the whole family in the kitchen with you (if you want them there!)
Sushi rolls are a great example of the way I feed my omnivorous family. I call it mixed meals. These are meals where I make 1 main meal, but the dishes include options for everyone (familiar foods and unfamiliar foods), that allow each person to customize their plate the way they like it.
