Sweet Potato Hash

I love a good vegan breakfast! Tofu scrambles have become my go-to for a decadent weekend breakfast because they are so versatile and easy! Just throw whatever you have in the fridge into the pan with some tofu and you’ve got a scramble! But…sometimes, you’ve got to mix it up! With Fall upon us, I start craving heartier food and this sweet potato hash hits the spot. Breakfast potatoes and hash browns are fairly common in my house, and I imagine most households when it comes to breakfast, but just like fries, kick up the health profile by switching out your Russet or Yukon Gold with a sweet potato.

Sweet potatoes are a superfood in their own right. They are low in sodium, saturated fat and cholesterol. Sweet potatoes are also a good source of dietary fiber, Vitamin B6 and potassium, as well as a very good source of Vitamin A, Vitamin C and Manganese. They are a great alternative to the regular potato any day, but I especially like using them in breakfast recipes because they add a bit of sweetness to a savory dish (the perfect combo for breakfast). 

Sweet Potato Hash

I call this a “hash” because it reminds me of the corned beef hash my mom used to make us as kids. A hash is diced or chopped meat, potatoes, and spices that are mixed together and then cooked together with onions. It is simple, plain food, but it’s oh so good. Instead of corned beef, I used LightLife’s Fakin’ Bacon in this sweet potato hash, but feel free to use whatever bacon is your favorite. I think the tempeh works really well in the recipe so that it crumbles alongside the sweet potatoes.

Sweet Potato Hash

To make this recipe, you just need 4 ingredients and 15 minutes. The key to the quick cooking time is in the size of the sweet potatoes. The smaller the dice, they quicker they cook!
