My kids love these bruschetta hand pies. They are big fans of bruschetta and Kalamata olives so these are an easy sell anyway, but these are always a favorite. I have to be careful they don’t all disappear without me grabbing one when they come out of the oven!
They are flaky and tangy with the olives and tomatoes, and so light and fun to eat. I like to pair them with my gazpacho or a small salad for a meal. You can also cut the sheet into 8 squares into 4 and serve them as appetizers. Try folding them into purses instead of triangles if you go that route and you’ve got an elegant appetizer for the grown ups! These are fun to make with the kiddos too – perfect for small hands. With just 4 ingredients, they don’t require much prep or fuss either, and they cook in 10 minutes!
