Today’s cooking video shows you how easy and quick it is to make vegan taquitos! I really love recipes that do double duty for another meal. My Fiesta Beef recipe is the powerhouse in this recipe, but these vegan taquitos also have black beans and vegan cheese. You can use the leftover Fiesta Beef from Taco Tuesday to whip up a batch of these.
I used Daiya’s cheddar style shreds on top, but their jalapeno jack or one of Follow Your Heart’s varieties would be tasty too. To mix things up, you could add olives inside as well.
Because it’s so simple to make these and I usually have leftovers after Taco Tuesday, I like the idea of making a batch and freezing them for snacks and lunches later in the week. Just pop them in a microwave for a minute or so and they are ready to eat!
Before rolling them up, soften the tortillas by placing 2-3 on a plate and cover with a paper towel. Heat them in the microwave for a minute and they will be ready to roll.
