It’s summer grilling season and this grilled vegetable stack is a great one to fire up the barby! I created this recipe while in Hawaii, grilling with family and friends. Half of us were vegan while the other half were grilling meats. I wanted something fresh, but a little more special than a side of grilled veggies. Voila! I came up with this grilled vegetable stack that couldn’t be easier, but looks oh so elegant.
When I grill vegetables, I keep it super simple just a drizzle (and rub) of a really good olive oil, some sea salt, and some pepper. That’s it! My favorite veggies are mushrooms, zucchini, red peppers, and cauliflower, so that is what I used for this grilled vegetable stack, but obviously use your favorites. You just need to be able to slice them in a way that they can lay flat and stack on top of each other.
