Lunch is my favorite meal of the day. I get a ton of pleasure in preparing a nutritious, flavorful meal all for myself – distraction free, with no one in the house but me! I have the luxury of working from home, so making a delicious vegan lunch daily is very easy, but even if you have to work outside the home, the following recipes will make packing a vegan lunch a pleasure for you too!
I love this salad. Scoop it over salad greens or into romaine leaves (and serve alongside tomato and cucumber slices), spread it on a sandwich, or fill endive leaves and serve alongside a cup of soup.
I love this salad so much that I eat it once or twice a week! I prep it in the morning while my kids are eating breakfast so it is done marinating by lunch. It also tastes great with fresh cherry tomatoes, instead of sun-dried tomatoes.
Lettuce wraps are a fun and easy lunch. I make the filling on my Batch Cook Sundays for the week or the night before if I don’t have time to make it that day when hunger strikes. You can change these up any way you like with different veggies and condiments too.
Bowls are one of the easiest (and my favorite) vegan lunches. This recipes uses some of my favorite ingredients, but feel free to mix it up with whatever strikes your fancy – be it a taco bowl (with Taco Tuesday leftovers) or an Asian bowl (with teriyaki tofu and nori). Start with a ton of greens and top with your favorites ingredients, sauce or hummus.
I eat these almost weekly. They are super quick to throw together. If you are making them to eat later, pack the nori sheets separately, (stored in a ziploc), so they maintain their crunchiness.
