“What The Veg” is a monthly series on the blog about a vegetable.  I highlight some facts about the featured veggie and then share a few of my favorite ways to prepare it.  This month, let’s talk about green beans!  This is probably the most versatile of green veggies.  Find them canned, frozen or fresh.  Boil, steam, bake or stir-fry them, you can find these beauties in soups, casseroles, and stir-fries.  They even make great crudite.  Below are a few more ways to inspire you to eat your green beans!

Toss Them

One of my favorite ways to eat green beans is to throw them in salads.  Blanch them for 3 minutes in boiling water and immediately immerse them in an ice bath.  Cut them into 1/2 inch pieces and toss them with your favorite salad greens, cherry tomatoes, avocados, and sliced almonds.  Drizzle on a mustard and red wine vinegar dressing and you’ve got a fresh and beautiful salad in minutes!

Roast Them

I got so excited when I read this recipe in the latest issue of Vegetarian Times: Rosemary-Garlic Carrot and Green Bean “Fries.”  I think it is an inventive and fun way to get kids to eat their green beans!  Read the recipe here.
