As some of you may know, I provide all of the dietary substitutions for each Raddish Kids recipe. I do it because I LOVE this monthly subscription kit. Behind-The-Scenes at Raddish Kids
This month’s Raddish Kids box is one of my favorites. Themed “Eggscellent Experiments,” this kit not only contains three recipes, but it also has three built-in experiments for eggs. You might be thinking, “But, Steph, you’re vegan. Why are you so excited about this month’s kit?” I’m so glad you asked! I am thrilled to share this month’s kit with you because the dietary substitutions I provided this month came out great, making this one of the most challenging kits for me to make allergen free, but also the most rewarding because I was able to do it all while allowing kitchen scientists to be able to do all of the experiments too. Let me show you how!
The Chocolate Souffle Cake
I wasn’t sure if this recipe was going to work allergen-free, but hooray for aquafaba and Follow Your Heart’s VeganEgg. The key to any souffle is the egg whites. To make this vegan and egg-free, I used aquafaba, the liquid from a can of chickpeas. Did you know they work just like egg whites? You beat them exactly like you would egg whites and they form the same stiff peaks. This was my first time working with aquafaba in place of an egg white and I was blown away with how easy it was to substitute with it!
The VeganEgg does a great job at replacing the egg yolks, but it does add a bit of liquid to the recipe, so it needs to bake 5-10 minutes longer, and also allow the cake to sit for about 15 minutes after it comes out of the oven. Another recommendation is to bake the cake into smaller ramekins or cake pans and have several small cakes instead of one large one.

The Scientific Chef’s Salad
My next challenge was the Scientific Chef’s Salad. The classic topper on a chef’s salad is the hard-boiled egg, and it’s also the experiment in this recipe. To give kids the opportunity to still explore why the shell comes off the egg when it boils, I replaced it with a beet that sheds its skin when boiled. Two for two!
Crispy Chicken Tenders
This last recipe was a cinch with Follow Your Heart’s VeganEgg. The product works (and smells) just like an egg, making it easy to dip your plant-based protein into it and then the breadcrumbs.
