St. Patrick’s Day is about a week a way, meaning… it is time to eat your greens! Oops! I guess, I mean wear green. I clearly have a one-track mind for food, so naturally, the “green” holiday, (as it is endeared to me), got me thinking about all of the delicious ways to eat greens. Of course, you can steam them and blanch them in delicious ways, or toss them in flavorful salads, but may I suggest some fun alternatives to inspire you to eat your greens with new interest? Below is a list of 7 of my top ideas. Let me know which one you love most!
Fun Ways To Eat Your Greens
1. Nori Wraps
Collard and lettuce wraps are okay, but when you really want to add green staying power, go with nori! This sea vegetable is packed with so many good nutrients that you can’t help but feel healthier eating it. Roll these wraps around your favorite greens and vegetables, drizzled with some Bragg’s Amino Acids or tahini sauce. This is a quick and easy snack, or can be a healthy lunch when paired with a cup of soup or salad.
You guys know that I love my spiralizer. These zucchini noodles are so much fun to make, and equally entertaining to eat. It is my husband’s favorite way to eat his vegetables!
I love making pesto, especially with my kids because pesto recipes are so versatile. Choose your favorite nut and green, add in a little olive oil, garlic, and lemon juice, and you’ve got a delicious sauce or spread that is packed with green goodness. I prefer walnuts or pine nuts in my pesto, and favor basil and spinach for my greens.
4. Smoothie Bowl
Toss a handful of spinach, kale, or any other green into a smoothie for a nutritious, fiber boost, but really change things up with a smoothie bowl. It’s green goddess fun! Basically, you pour your favorite green drink into a bowl and top with delicious goodies, like granola, nuts, and fruit. There are so many green smoothie recipes out there, but you can also add it to a peanut butter or chocolate concoction without changing the taste, a great way to disguise and eat your greens, especially with kids (I won’t tell if you don’t!).
6. Avocado Toast
This might be my favorite way to eat your greens! Lay a handful of arugula, spinach, or baby kale atop a crusty slice of bread slathered in avocado. Drizzle on some lime juice and a pinch of salt for a delicious snack that is not only healthy, but also beautiful.
7. Air Fry Chips
My mom and dad recently gifted me with an air fryer and I admit that I have neglected to make the most of it – yet! I have been pinning all kinds of air fry recipes, including these kale chips. They are an inventive new way to eat your greens!
