I haven’t had dairy in so long that I no longer miss it or crave it. I have been down with the flu for the past several days, and I have never been more grateful for my husband or my meal plan! My family has been well fed thanks to my careful planning the previous week. I realized what a godsend it truly is to have a roadmap for the week. If you want to be successful at something, you have to have a plan. Whether it’s making healthy meals for your family stress-free, cleaning out your closet, or learning to play the piano, you need a plan of attack. This sounds obvious, right? Then, why do so many of us have a hard time sticking to a plan, especially this time of year when we are perky with healthy intentions?
When I went vegan and ditched dairy seven years ago, I had no plan. I just did it. I know, crazy! That’s not the way to do it. It was hard, painful, tumultuous. When I think about dairy, my mind fills with images of creamy sauces and decadent cheese plates. First up are these breakfast parfaits. So fancy and creamy, yet really so easy. Mix them up a million different ways depending on the dairy free yogurt, fruit, and toppings you layer.
2. Dairy-Free Breakfast Pizza
This morning meal pizza is so much fun for the kids and full of ooey gooey cheesy goodness.
3. Soaked Bean and Cheese Burrito
Speaking of ooey and gooey, this wet bean and cheese burrito is one of my favorites.
