I am so excited about this recipe! My oldest daughter use to love a recipe for chicken I made in the crock pot. Now that she’s vegetarian (she went veg last October on her own), that’s the one animal food she says she misses most. She repeatedly asks me if I’ve found a way to veganize the recipe. Always up for a challenge in the kitchen, I have tried and tried, but haven’t found anything to mimic the texture of the chicken. One of the great things about the recipe is the way the chicken can be shredded after cooking for several hours in the slow cooker. I couldn’t find a vegan replacement that shredded the same way…until jackfruit!
Have you heard of jackfruit? It’s been popping up on many vegan menus. It’s a species of tree found in Southeast Asia. It is very popular in tropical areas. You can find it in Asian food stores or online on Amazon.com. I first discovered it at Sage in a tuna melt, which was amazing. I forgot about its versatility until recently when I was browsing recipes on Pinterest and was struck by the number for BBQ shredded jackfruit. It hit me all of a sudden – of course, jackfruit!
So, I set out on an experiment last week to see what would happen if I used the exact same recipe, but switched out chicken for jackfruit. I did just that and it came out great! My daughter loved it! This recipe couldn’t be any easier. It’s just 3 ingredients and your slow cooker! I used a packet of Italian dressing mix, but you could change this up with any seasoning blend you prefer. I also really like the flavor of Imagine’s No Chicken Broth, but regular vegetable broth would work just fine too.
- 2 15 ounce cans of jackfruit (drained)
- 1 packet of vegan Italian dressing seasoning
- 32 ounces Imagine No Chicken Broth (or vegetable broth)
- Place all ingredients in a slow cooker and cook on low for 4 hours.
The possibilities for using this slow cooker jackfruit recipe are endless. Some ideas (and future recipes to come on the blog) are in enchiladas and quesadillas.
