I LOVE hummus. Seriously, I don’t think I could live without it! And although it is super convenient to buy, it is really easy to make. I came up with this edamame version to lighten up the fat in my favorite variety at Trader Joe’s by taking out the oil and replacing it with vegetable broth (one of the things I learned after reading The Vegiterranean Diet by Julieanna Hever.) 1 1/2 cups edamame (cooked and shelled)
1 clove garlic, minced
1/4 vegetable broth (I used Imagine No-Chicken Broth)
1 tsp salt
Juice of 1 small lemon
1. Combine all ingredients in a food processor and pulse until smooth.
2. Add more broth 1 tablespoon at a time, if needed, to reach desired consistency.
3. Taste for seasonings and add more lemon juice and salt, if needed.
