Banana Bliss Pancakes
1 2/3 cup gluten-free all-purpose flour
1 1/2 cups coconut milk
1/4 cup canola oil
1 teaspoon vanilla
1 banana, mashed
1/2 cup shredded coconut
1 tsp baking powder
3 tablespoons agave
1/4 teaspoon salt
3 teaspoons Ener-G Egg Replacer
Coconut oil, for pan frying the pancakes
Sliced bananas (optional for garnish)
Toasted macadamia nuts, chopped (optional for garnish)
1. Mix 3 teaspoons Ener-G Egg Replacer with 2 tablespoons warm water. Set aside.
2. In a separate mixing bowl, combine the flour, baking powder, and salt. Stir in the egg replacer mixture. Combine well.
4. Stir in the mashed banana and coconut.
5. Heat 1 tablespoon coconut oil in a frying pan over medium heat. Spoon batter into pan until you have your desired size of pancake. Cook 2-3 minutes and flip when golden brown.
6. Garnish with sliced bananas and toasted macadamia nuts. Drizzle with maple syrup or agave.
